The Ultimate Breakfast Sandwich Recipe: Eggs, Pancetta, Avocado & Spicy Mayo

Ingredients

For the Sandwich:

  • 2 ciabatta rolls, halved and lightly toasted
  • 4 slices of pancetta, sliced into smaller pieces (or substitute with bacon)
  • 4 eggs
  • Non-stick cooking spray (or 2 tablespoons butter, optional)
  • 1 ripe avocado
  • ½ teaspoon red pepper flakes
  • Salt and pepper to taste (light on the salt due to pancetta or bacon)
  • 2 slices of muenster cheese (cheddar, gouda, or your favorite melty cheese)

For the Spicy Mayo:

  • 2 tablespoons mayonnaise
  • 1 teaspoon sriracha (adjust to taste)
  • 1 teaspoon lime juice

Method

  1. In a small bowl, mix the mayonnaise, sriracha, and lime juice until smooth. Set aside.
  2. Cook the Pancetta. Heat a skillet over medium heat. Cook the pancetta until crispy and lightly browned. Remove and place on a plate lined with paper towels to drain excess grease.
  3. In a bowl, mash the avocado and add red pepper flakes. Season with salt and pepper to taste, keeping in mind the pancetta or bacon is already salty.
  4. Next, crack the eggs into a bowl, add a pinch of salt, and whisk well.
  5. Heat a non-stick skillet over low heat and spray with non-stick cooking spray (or use butter, if preferred).
  6. Pour in the eggs and stir continuously with a spatula until soft, creamy, and just set. Remove from heat.
  7. Spread a generous layer of spicy mayo on the bottom half of each toasted ciabatta roll.
  8. Add a slice of cheese, followed by half the scrambled eggs, two slices of pancetta (or bacon), and a layer of avocado smash.
  9. Place the top half of the ciabatta roll on top.
  10. Broil the Sandwich: Place the assembled sandwiches on a baking sheet and broil in the oven for 1-2 minutes, or until the cheese is melted and gooey. Keep a close eye to prevent burning.
  11. Slice the sandwich in half and enjoy immediately!

Notes:

  • Pancetta can be substituted for bacon, but both are naturally salty, so be cautious with seasoning.
  • The broiling step adds an extra layer of indulgence by melting the cheese perfectly—don’t skip it!
